Simple Apple Butter (No Water)

Apple butter is a fantastic filling for sweet baked goods! Because it cooks down nice and thick, it won't ooze out of your pastries as they bake. And the taste is just perfect—no store-bought version can hold a candle to it.

    I really want to share this recipe with you and show you how to make apple butter. I make it every year. It comes out very tender, with little pieces of apple, and it's incredibly tasty. You only need two ingredients: sugar and apples.

    Peel the apples with a knife, quarter them, and cut out the cores. Then chop the flesh into small pieces.

    Put the apples in a basin and cover them with the sugar—don't stir. Leave them like that overnight.

    By morning the apples will have given off juice; stir them well and set them over the heat for 10 minutes.

    In the evening, simmer the apple mixture again for 10 minutes, stirring now and then. Leave it until morning. In the morning, simmer the apples once more for 15 minutes, then let them cool for 5 hours. Simmer again for 15 minutes and cool for another 5 hours. Then cook them one last time, stirring, so the excess liquid evaporates. Pack the apple butter into sterile jars (it must be hot when you do) and seal.

    Turn the jars upside down and leave them to cool. This apple butter keeps just fine at room temperature.

  • Apple butter made this way comes out quite thick—use it as a filling for pies, hand pies (fried or baked), and buns. You can also just spread it on bread; both kids and grown-ups love it that way. Sometimes I toast slices of bread and spread the apple butter on top—that snack disappears off the table in no time. I usually pack it into 1-pint (0.5-liter) or 1-quart (1-liter) jars. It goes fast in winter, since I'm always baking sweets, which my family adores—especially with this filling. Sometimes my stash doesn't even last half the winter, so I make more during the season. Luckily, apples are sold year-round and sugar is always on hand. Give it a try yourself!
