Vanilla Cranberry Kissel

A recipe for a real, thick homemade kissel with a tart edge. Cranberry kissel with vanilla is delicious and good for you. It's quick and easy to make — all you need is fresh berries, or rather their freshly squeezed juice. (Kissel is a classic Eastern European fruit drink thickened with starch, somewhere between a thin pudding and a thick juice.)

    First, rinse and pick over the cranberries.

    Pour boiling water over them in a sieve. Let the water drain off, then mash the berries with a spoon.

    Pour the juice that comes out into a separate bowl and set it in a cool, dark spot.

    Put the mashed berries in a piece of cheesecloth and squeeze the remaining juice into an enamel saucepan. Add a cup of hot water, set it on the stove, and bring to a boil. Strain the mixture through cheesecloth and pour it back into the pan. Stir in 3 teaspoons of sugar.

    Cool about a quarter of the strained liquid and stir the 2 teaspoons of starch into it. You can also dissolve the starch in plain cold water.

    Set the strained liquid on the stove and cook, stirring constantly. When it comes to a boil, pour in the starch mixture and add vanilla to taste. Stir. As soon as the kissel returns to a boil, pour it into another container right away. Keep stirring so it doesn't boil too long and turn watery. Once the kissel has cooled, stir in the reserved raw cranberry juice.
