- Okroshka on kefir with radish—a really simple recipe for a summer cold soup! Okroshka is the dish most associated with the freshness of spring. When you want something light yet filling, this familiar favorite is perfect. I highly recommend trying my signature, favorite version: okroshka on kefir. It's the tastiest twist on the classic, made with ingredients everyone knows. Okroshka is a Russian spring-summer specialty beloved by European food lovers! The classic recipe uses kvass as a base, though all sorts of cold-soup variations have long been popular and also go by the name okroshka. Besides the kefir base above, other liquid bases include whey, diluted vinegar, birch kvass, ayran, and mineral water.
