In a separate pan, heat 250 ml (about 1 cup) of heavy cream (33% fat) until hot but not boiling. Adjust the amount of cream to your purpose: for soaking a cake, you'll want the full 250 ml, as in this recipe.

As soon as the sugar syrup turns golden, take it off the heat.

Pour the hot cream into the syrup in a thin stream, stirring well as you go.

Return the pan to the heat and whisk all the ingredients together well.

Add 40 g (3 tbsp) of butter to the pan.

Add half a teaspoon of sea salt to the pan.

Whisk everything in the pan together again until smooth.

Cook the caramel for about two more minutes, stirring as it goes, then take the pan off the heat.
