Chicken and Lentil Soup with Potatoes and Herbs
A very healthy and, best of all, delicious soup. If you've never made lentil soup, you've been missing out—or rather, you've been missing all the good, nourishing nutrients packed into this wonderful little grain. Lentils are especially popular with health-conscious cooks and vegetarians. And if you can't go without meat, simmer this soup in chicken broth. It turns out wonderfully tasty!

Step 1:
Gather all the ingredients for the soup.

Cut the chicken into pieces—just a few parts are plenty for this small batch of soup. Rinse the meat and put it on to cook. When the water comes to a boil, season with salt to taste and lower the heat. The broth will be ready in 45 minutes.

Peel the onion and cut it into small cubes.

Grate the peeled carrot on the fine holes of a grater.

In an oiled skillet, first sauté the onion, then add the grated carrot. Let everything cook down a bit, stir, and turn off the heat.

I used new potatoes. Peel them and cut into sticks.

Once the chicken is cooked, add the potatoes to the broth. They'll cook fairly quickly.

Since my potatoes are new, after 10 minutes you can add the red lentils—just rinse them under running water first. They cook for about 10-15 minutes.

When the potatoes and lentils are tender, stir in the sautéed onion and carrot. Taste the soup and add more salt if needed. Let it simmer just a couple more minutes, then turn it off.
