Bird's Milk Dessert Made with Agar-Agar

A quick, delicious, and silky dessert. I love desserts—and I love quick ones even more. So why not make something that takes 15 minutes at most? Bird's Milk (Ptichye Moloko) is exactly that: fast to put together, yet satisfying and tasty.

  1. Step 1:

    Gather all the ingredients. You can use gelatin instead of agar, but if you do, follow the instructions on the package. For the sour cream, go with 20% fat or higher.

    Combine 350 grams of the sour cream with the sugar and agar-agar and whisk until smooth and bubbly. Spoon the sour cream mixture into glasses or dessert cups and refrigerate for 10-15 minutes.

    Break the chocolate bar into pieces, add the remaining 50 grams of sour cream, and melt on the stove until smooth.

    Spoon the chocolate mixture over the white layer and swirl it in slightly. Garnish the top with a little shredded coconut. I used fairly large glasses, but I'd suggest smaller molds—just a few teaspoons' worth—since this dessert is quite rich, though only moderately sweet.
