Split Pea Soup with Pork and Smoked Ribs

Step 1:
Gather the ingredients and spices for this delicious pea soup. For a clear, flavorful broth, put half an onion (skin on), a few carrot slices, and the stems from your dill and parsley into the pot.

Add about 600 g of bone-in pork to the pot.

Pour in enough water to cover.

Add allspice to taste, cover the pot, and bring the broth to a boil over high heat.

While the broth cooks, make the croutons: cut the bread into cubes, spread them on a baking sheet, and bake in a 210°F (100°C) oven for an hour.

Heat 3 tablespoons of vegetable oil in a skillet and add the chopped onion.

Grate a good-sized carrot on the large holes of a grater.

Cut two potatoes into rough cubes.

Remove the sliced carrot from the pot.

Add the potatoes, cover, and bring the soup to a boil over high heat. Season with salt to taste, then lower the heat and cook until everything is tender.

Five minutes before the end, add the pepper blend and dried herbs to taste.
