- Add the lemon juice to the egg whites and mix well. 2. Sift the powdered sugar into the whites and juice. 3. Mix all the ingredients well with a whisk, without whipping them. Add more powdered sugar if needed. Royal icing should be fairly thick. Try dripping it onto a table or board — it should be moderately fluid and glossy. Enjoy, and good luck!
