Royal icing — for royal desserts! Get cooking, your majesty! It's used to decorate cakes and gingerbread. You can make figures and patterns of incredible beauty from it, and anything else a master's imagination can dream up. Some pastry chefs keep their royal icing recipe a secret, but I'll share mine without a second thought.

    1. Add the lemon juice to the egg whites and mix well. 2. Sift the powdered sugar into the whites and juice. 3. Mix all the ingredients well with a whisk, without whipping them. Add more powdered sugar if needed. Royal icing should be fairly thick. Try dripping it onto a table or board — it should be moderately fluid and glossy. Enjoy, and good luck!
