  • Finely chop the chocolate. In a small saucepan, combine the cocoa, sugar, and water, set it over low heat, and stir until the cocoa and sugar dissolve. Add the chocolate and stir until smooth. Pour in the warm milk, mix well, and take it off the heat before it boils. For the foam: whisk 40 ml of hot (not boiling) milk until frothy. Everyone knows hot chocolate is made from cocoa beans — the first records of which go back 3,500 years, well before the common era — and the ancient peoples drank chocolate as a hot beverage; chocolate bars came along only a few centuries ago. Europe learned of hot chocolate in 1527 thanks to the Spanish conquistador Hernán Cortés, who conquered Mexico and noticed the local custom of drinking a hot, bitter-spicy beverage. Europeans made it a little differently (a closely guarded secret), so the flavor was more pleasant, and in 1700 the English softened it by adding milk. These days people add all sorts of things — milk, cream, nutmeg, cinnamon, chili, vanilla, eggs, ground peanuts, cognac, rum, and more. Through the ages, hot chocolate has been a symbol of comfort and indulgence; one sip of real bittersweet hot chocolate and you understand all the fuss — there's no other drink quite like it. Different seasonings change the flavor and aroma dramatically while the base stays the same, and the consistency can be anything from thin to creamy depending on the recipe. Classic hot chocolate is made from cocoa beans (these days, a good-quality chocolate bar works too), milk, and cinnamon — simply melt the chocolate, add milk, and stir with a cinnamon stick.
