- This dead-simple recipe is a lifesaver when you don't feel like fussing in the kitchen for long but you're crazy about homemade jam. Use any cherry plums you like — yellow or red. The jam takes on the color of whatever berries you use; I made mine with red ones, so it came out a bright, deep red. First, rinse the cherry plums well under cold running water and let them dry in a colander or large sieve to shed any extra moisture — you'll be cooking this jam without a drop of added water. Then halve the cherry plums and remove the pits. Put the halves in a pot and cover them with the sugar. Let them sit for 5–6 hours; in that time the plums will release their juice and the sugar will dissolve into it. If it's very warm out, move the pot to the fridge so the fruit doesn't ferment. You can let the fruit and sugar sit even longer — for instance, cover the plums in sugar in the evening and cook the jam in the morning, which is very convenient. Because cherry plums are so juicy, you can cook the jam without adding any water or other liquid. Once the plums have given off plenty of juice and the sugar has dissolved into a syrup, you're ready to cook. Set the pot on the stove and bring it to a boil, stirring constantly so the sugar and fruit don't scorch or stick to the bottom. As soon as it boils, skim off the foam that rises to the top. Cook over low heat, stirring constantly, for 5 minutes, then take the pot off the stove right away. Your five-minute cherry plum jam is ready! Seal it in sterilized jars if you like, or just dig in and enjoy that bright summer flavor. Enjoy!
