Potato and Meatball Soup

The recipe couldn't be simpler, and the result is a hearty, tasty, wholesome lunch. This meatball soup is best served with a dollop of sour cream and fresh herbs.

  1. Step 1:

    Gather your ingredients. I make the ground meat ahead of time from pork and beef. Season it with salt and pepper and mix well.

    Cut the carrot into thin strips.

    Cut the potatoes into medium dice.

    Dice the mushrooms and finely dice the onion. Rinse the rice well several times.

    Pour the vegetable oil into a pot, heat it, and add the carrot. Sauté lightly.

    Add the onion, mushrooms, and rice to the carrot.

    Sauté all the vegetables together for 5 minutes.

    Add the potatoes, pour in boiling water, and cook.

    Shape the ground meat into meatballs.

    Drop the meatballs into the pot with the vegetables and cook until the meatballs are done.

    At the very end of cooking, season with spices, bay leaf, and herbs. Turn off the heat, cover the pot, and let it rest for 5–10 minutes.
