Step 1:
How to make feijoa jam correctly? To prepare feijoa for the winter, prepare good, whole, strong feijoa fruits, sugar and a little water. Even if you take unripe fruits, it's okay - they are suitable for jam in any case.
Step 2:
To start, cook the sugar syrup. To do this, combine sugar and water in a saucepan, stir and heat, stirring, until the sugar crystals completely dissolve. It is not necessary to boil, because we will do it later with fruit.
Step 3:
Wash the fruits of feijoa thoroughly with a brush, cut off the tips with tails (you can leave the buttocks, or you can also cut them off). If necessary, cut off the damaged parts. Then grind in any convenient way in a puree. This is done with a blender, a combine harvester, a meat grinder - of your choice. The consistency can also be chosen by yourself: with coarser fruit particles or smaller ones.
Step 4:
Add the feijoa puree to the hot syrup and stir.
Step 5:
Bring the feijoa jam to a boil, boil for five minutes, then spread hot in sterile jars and seal tightly with sterile lids. After cooling, send the jars of jam for storage in the cellar or storeroom.
Step 6:
Serve the finished jam in small portions, applying it with a clean spoon from a common jar.
If you know and like the taste of raw feijoa jam, but there is no way to prepare it exactly in this form, then make a thick fragrant feijoa jam for the winter by fast boiling. Jam, both raw and boiled, has a fairly bright rich taste and amazing aroma.
You can complement and decorate the taste range by adding various components at your discretion. So, for example, you can put a little lemon, crushed cardamom, walnut kernels, finely chopped dried apricots... Each of these ingredients will add its own unique note and give the finished jam a special charm and sophistication.
Many people prefer to prepare feijoa with sugar without cooking. This method is good, of course, but it has one significant disadvantage: you can store such a blank only in the refrigerator. Whereas jam with cooking can be stored at any temperature for a long time, without problems.
Please note that due to the high iron content in feijoa, jam from it darkens quite quickly, especially if this jam is raw. There is nothing wrong with this, the product is still delicious and edible.
Also keep in mind that there are very hard particles in feijoa. And they remain in the jam if the fruits are simply passed through a meat grinder. Again, the jam will be delicious and edible, but, for example, it is better not to give it to a small child. To remedy this situation, it is better to grind feijoa in a food processor or blender.
For flavor, you can add a little citric acid to the jam. It will also have a positive effect on its brightness))
