  • Making this jam really is dead simple. Start, of course, with the berries: sort them carefully and wash them. Choose ripe, whole cherries with no blemishes. Lay the washed berries on a clean towel to dry off a little, then pit them with a cherry pitter. Transfer the pitted cherries to an enamel pot and set it over the lowest heat. Here's the key part — don't add any water. The jam is made from just two ingredients! Wait for the juice the berries release to start bubbling, stirring all the while, and cook for 5 minutes. Add the gelling sugar and stir well until it's fully dissolved — you don't need to bring it back to a boil, you just don't want any undissolved crystals left. Take the pot off the heat and spoon the hot jam into dry sterilized jars, seal the lids tightly, and let it cool completely at room temperature. P.S. To sterilize the jars, warm them in the oven: dampen a towel, wring it out, and spread it on a baking sheet. Lay the jars on their sides on the damp towel, put the baking sheet in the oven, and turn it on to 250°F (120°C). Once it's up to temperature, keep the jars in for 10 minutes. Store the jam somewhere dark and cool. It keeps well, but it rarely lasts long :) because it turns out incredibly tasty, beautiful, and downright irresistible!
