- Before you start cooking, prep the ingredients: slice the chorizo into rounds; peel and thinly slice the onion; peel the garlic cloves and chop them with a knife; wash the basil, pat it dry, and finely chop it (set aside a few whole sprigs plus a little chopped basil to garnish the finished dish); and rinse the tomatoes and blot them dry. Small, firm, fleshy tomatoes like grape tomatoes work best here. Grate the Parmesan on the coarse side of a grater. Now you can get cooking: 1. Fill a large pot with water, salt it, and set it over high heat. Once it boils, add the penne, stir, and reduce the heat to medium. Cook the pasta to al dente — meaning it stays slightly firm at the center. Drain the water. 2. Set a large skillet over high heat, add the sliced chorizo, and fry for 3 minutes, stirring constantly, until browned. Using a slotted spoon, transfer the chorizo to a plate and pour off the rendered fat from the skillet. 3. Return the skillet to the heat and add the onion and garlic. Cook, stirring, for 5 minutes, until the onion softens. Add the whole tomatoes and the chorizo and cook for another 5 minutes, stirring now and then. Stir in the tomato paste and mix well. Pour in the cream, stir again, and bring it to a boil. Cook everything together for 2 minutes, until the sauce thickens. 4. Add the penne and the chopped basil to the sauce and toss. Divide the penne among serving plates, top with grated Parmesan and chopped basil, and garnish with whole sprigs. Serve immediately. Enjoy!
