Homemade Vanilla Sweetened Condensed Milk

Delicious sweetened condensed milk made right at home. The trick is to cook it over the lowest possible heat, and to use a tall, heavy-bottomed pot so the milk doesn't boil over. Fresh whole milk gives the best results; if you're working with store-bought milk, it helps to add some heavy cream as well. Once it comes to a boil, the milk gently simmers, and in about 1.5 hours you'll have a wonderful sweet treat. Serve it with bread or cookies.

    1. Gather your ingredients. Measure out the whole cow's milk — it should be fresh. A little vanilla sugar adds nice flavor to the condensed milk, but it's optional. 2. Pour the milk into a heavy-bottomed pot. Set it over high heat, then turn the heat down after about 5–10 minutes. Foam will start to form on the surface; skim it off and keep cooking over low heat. The condensed milk takes roughly 1 hour to cook, and the liquid should reduce noticeably. 3. Now add both the regular and vanilla sugar. Stir well so the sugar dissolves. Cook for about another 30 minutes. If you're happy with the thickness, turn off the heat; if not, keep cooking. The longer it cooks, the darker the color will be. 4. You can pour the hot condensed milk into a sterilized jar and seal it, or serve this sweet treat on a plate alongside pastries. For breakfast, try it spread on slices of baguette — it's sweet, so kids love it, and homemade, it's free of preservatives and other additives. Enjoy! There are many ways to vary it: add cocoa powder for chocolate condensed milk, or stir in a little butter for extra flavor and aroma.
