Homemade Rabbit Noodle Soup

A healthy, delicious soup with a delicate flavor that's easy on the stomach. The recipe isn't complicated and the soup is fairly light. A lovely first course — and you can finish it with any fresh herbs you like.

Cooking method

    Gather all the ingredients.

    Put the rabbit saddle or breast in water and simmer until tender.

    While the meat cooks, make the noodles. Crack an egg into a cup, add water, salt, and the vegetable oil.

    Roll the dough into a thin sheet.

    Cut the sheet into fairly narrow ribbons, then slice into thin noodles.

    Scatter the noodles on a tray and let them dry while the meat cooks. You can also make a batch to keep on hand for other soups — they store beautifully in a cloth bag.

    For the soup, grate the carrot.

    Finely chop the onion.

    Peel and slice the potatoes. Once the rabbit is fully cooked, add all the vegetables to the pot. Salt to taste.

    About 10 minutes before the potatoes are done, add the noodles and check the salt once more. The soup comes out very fragrant, tender, and wholesome. Ladle it into bowls and serve. Enjoy!
