Homemade Ricotta from Milk and Cream

Make delicious, delicate ricotta at home yourself! If you use lighter cream, the ricotta won't be as rich — and it won't lose any of its flavor! Don't throw out the whey that's left behind. Use it for baking bread, buns, and rolls: just swap the water in your recipe for whey and the dough will taste even better. Enjoy!

    Gather your ingredients. I used heavy cream; if you want to cut the calories, go with lighter cream.

    Pour the milk and cream into a saucepan and set it over the heat.

    Add the salt.

    Stir and heat the mixture, bringing it almost to a boil but not letting it boil. If you have a thermometer, aim for about 200°F (95°C). Keep stirring so the milk doesn't scorch.

    Once the mixture reaches that temperature, pour in the lemon juice and stir well.

    Cover the saucepan, turn off the heat, and leave it until completely cooled.

    Line a sieve with several layers of cheesecloth.

    Pour in the cheese curds, fold the edges of the cheesecloth over, and let it sit briefly so the whey drains off.

    In the end we got about 400 g of beautiful ricotta! It's very delicate, creamy, and fragrant. Eat it on its own or use it in appetizers and desserts. And from the whey you can make pancakes, fritters, bread, and rolls — we have plenty of recipes on the site!
