Candied Watermelon Rind

A homemade treat that's delicious and wholesome! These candied watermelon rinds are a hit with grown-ups and kids alike. Unlike store-bought candy, they have no artificial dyes or preservatives — completely wholesome. Just a couple of pieces and you're in a good mood!

    1. Trim the green skin off the watermelon rinds, cut them into small sticks, and put them in a pot. 2. Cover the prepared rinds with water, add the baking soda, stir, and let them sit for 6 hours. 3. After that time, drain the water and rinse the rinds thoroughly under running water. 4. Cover the rinds again with water so it almost reaches the top, then add part of the sugar (500 grams). 5. Set the pot over the heat and cook the rinds over low heat for 20 minutes once it comes to a boil, then let them cool, leaving them for 6 hours at room temperature. 6. Repeat the cooking a second time and cool again for 6 hours. 7. On the third round, add the same amount of sugar to the rinds, stir in the vanilla sugar and cardamom, squeeze in the lemon juice, and cook until the rinds turn translucent. 8. Drain the rinds in a sieve, let the liquid run off, then roll them in the remaining sugar and let them dry on a baking sheet. The result is a fantastic treat — help yourself!
