Home-Canned Chicken with Prunes

A real lifesaver — canned chicken with prunes for the winter! Putting up canned chicken isn't hard at all; you just have to wait a while as it cooks in the oven. The prunes round out the dish with their flavor and aroma. If you like things spicier, add a little chili pepper. Every year I make a batch by this recipe, so when there's no time for a long cook, I just open a jar.

    1. Rinse the chicken under water and pat it dry. Cut it into serving pieces. Cover the prunes with warm water and let them soak a bit. 2. In the bottom of dry jars (washed well with baking soda), put the spices and prunes. Add the chicken pieces and sprinkle with salt. Cover the jars with foil and set them in a cold oven. 3. Cook at 340°F (170°C) for about 2.5-3 hours. Then seal the lids and move the jars to storage.
