Watermelon Rind Jam with Orange

Exotic jam — surprise your family and friends! A coworker once gave me an intriguing jam to taste, and I just couldn't figure out what it was made of; all I could tell was a hint of citrus. When she finally revealed the secret, I was floored: the jam was made from watermelon rinds! So once August rolled around, I gave this little wonder a go myself — and here's the recipe to share with you!

  • Here's how:
    • choose a pot for cooking — it should be enamel;
    • cut the colored part off the watermelon rinds (you only want the white layer between the green skin and the flesh) and cut them into cubes;
    • cover the prepped rinds with the sugar, set on the stove, bring to a boil, take off the heat, and leave for exactly a day;
    • after that time, bring the jam to a boil again and leave it for 12 hours (no need to cook it — just bring it to a boil and that's it);
    • bring the jam to a boil a third time, grate in the zest of a washed orange, squeeze in the orange juice, and cook for 5 minutes, then ladle the fragrant jam into dry sterilized jars (don't forget to save a little to taste).
  • Once the jam cools to room temperature, you can move it to storage in the cellar.
