Step 1:
How to make sea buckthorn jelly for the winter without cooking? To do this, you will need only two ingredients - sugar and sea buckthorn berries themselves. Separate the sea buckthorn from the branches. It is convenient to do this with scissors, cutting the berries immediately into the bowl. Remove the leaves and other debris.
Step 2:
Then rinse the sea buckthorn berries well and put them in a colander so that all the excess water runs off them. If there are small twigs left on some berries, it's okay, everything will be strained later. Berries can be poured on a towel and dried.
Step 3:
Dry berries must be crushed. In the preparation of large volumes, it is convenient to use a juicer. In small ones, you can take a chopper, a meat grinder or an immersion blender. Chop the berries in any convenient way.
Step 4:
Strain the whole sea buckthorn mass through several layers of gauze. At first, the juice will drip well, and then collect the gauze into a knot and squeeze it very carefully. Let it pass through the gauze and the pulp of sea buckthorn. The main thing is not to get bones and skins. After careful pressing, very little cake will remain.
Step 5:
But the maximum amount of juice with pulp will be squeezed out.
Step 6:
Pour sugar into the juice and leave for 5-7 hours. Periodically, the juice with sugar must be mixed. The amount of sugar can be changed slightly in one direction or another. If you add more sugar, it will dissolve longer, but the mass will be thicker. Sea buckthorn contains a natural thickener - pectin, so the mass will thicken itself.
Step 7:
Pour boiling water over the jars and lids. Fill the jars with sea buckthorn, close the lids and store in the refrigerator. The finished sea buckthorn jelly, of course, will be different from the store made on gelatin. It will look more like confiture. But its benefits will be undeniable, since the berries have not been subjected to heat treatment and have retained a maximum of vitamins. Have a nice winter treat!
