Finger-Licking Fried Zucchini for the Winter

Love fried zucchini? Put some up for the winter! On a cold winter day, it's such a treat to add a couple of pieces of fried summer zucchini to your mashed potatoes — and they're so fragrant, like they were just fried! Give it a try, it's worth it! This amount of ingredients makes one 1-quart (1-liter) jar.

  • How to put up finger-licking fried zucchini for the winter:
    1. Wash the zucchini and cut into rounds (not too thin, about 1/2 inch / 1 cm thick).
    1. Brush each round with olive oil using a silicone brush.
    1. Fry each piece for 3 minutes per side.
    1. Make the marinade. In a deep bowl, combine the water, lemon juice, the remaining olive oil, the garlic pressed through a garlic press, large pieces of chili pepper, and the salt, sugar, and herbes de Provence.
    1. Simmer the marinade over low heat for a few minutes after it comes to a boil.
    1. Pack the zucchini rounds into sterile jars, fill with the hot marinade, and seal immediately with sterile lids.
  • Store these jars in a cool place (I keep mine in the cellar).

  • Since everyone's preference for saltiness, sweetness, bitterness, spice, acidity, and heat is different, always adjust the spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially important not to overdo (chili pepper, for example).
  • Which zucchini work best? Choose young ones with tender skin. Wash and peel them — you don't have to remove very thin skin. If you use more mature zucchini, trim off the tough peel.
