Finger-Licking Adjika with Apples

A favorite sauce gets a sweet twist — now there's an intriguing idea! I wouldn't call myself a huge fan of really spicy food, but I absolutely adore adjika! So I tweaked the recipe to suit me and make a sweet version. This fragrant, zesty sauce is a must-have in every kitchen. Make it along with me! (Adjika is a spicy Caucasian pepper-and-garlic relish.)

    1. Wash the tomatoes (choose soft, garden-grown ones — the flavor of the finished dish depends on it) and cut them into pieces.
    1. Wash the bell peppers, remove the stems and seeds, and cut into a few pieces.
    1. Rinse the apples, cut into quarters, and remove the cores.
    1. Peel the garlic and remove the stem from the hot pepper (I leave the seeds in for extra heat).
    1. Run all the prepped, cut-up ingredients through a meat grinder (use the fine plate).
    1. Add the sugar and salt to the mixture, set it on the heat, and cook for half an hour (after it comes to a boil) over medium heat. Foam will form as it cooks — skim it off with a slotted spoon.
    1. About 5 minutes before the end, pour in the vinegar and stir.
    1. Spoon the adjika into dry, clean jars and seal with the lids. Wrap the jars in a terry towel and leave to cool completely. Only then move the jars of adjika to a pantry, basement, or cellar.
