Pasta with Liverwurst

    1. Peel and chop the onion. 2. Pour the olive oil into a heavy-bottomed skillet, heat it over medium heat, add the onion, and season with salt. Cook until the onion is very soft. 3. Add the liverwurst cut into small pieces and cook, stirring, until done, about 5 minutes. 4. Cook the pasta in salted boiling water until al dente (cooked through but still firm in the center). Drain, reserving a cup of the cooking water. 5. In a saucepan over low heat, melt the grated cheese (set a little aside for the finished dish), adding a splash of the pasta water (about a third of a cup). 6. Stir the cheese sauce into the sausage and onion, add the cooked pasta, toss, and keep it all over the heat together for 1–2 minutes. Add more pasta water if needed. 7. Serve sprinkled with grated cheese and freshly ground black pepper. Enjoy!
