- Start with the broth. Cut the rinsed beef into medium pieces and put them in a heavy pot. Brown them well. Chop the carrot and onion and add them to the meat. Season with spices, add salt, and pour in water. The beef cooks for a long time over low heat. Keep the water at a gentle simmer rather than a hard boil—that way the broth stays clear instead of cloudy. While the broth simmers, make the dough. Put the dry yeast in a bowl and pour in the warm milk. Stir this mixture into the sifted, salted flour and knead. Add the vegetable oil at the end and knead again. Cover the dough with a cloth and let it rest for 15 minutes. After that, divide the dough into 4 pieces—roll each out thinly and brush with melted butter. Roll each sheet up into a log. Cut the logs into pieces about 1 inch (2–3 cm) and arrange them in a steamer. In 30–40 minutes the fluffy rolls will be done. Check that the broth is ready and stir in the chopped herbs. I used what I had on hand—parsley and dill—but you can also add basil or cilantro. Serve the khinkal with the meat broth. Enjoy the unusual flavor and aroma!
