- Make the meatballs. Rinse the veal and grind it in a blender. Wash the herbs and chop them finely. Grate the cheese on the coarse side of a box grater. Soak the bread in the milk for 2 minutes, then squeeze it out and mix it with the ground meat, herbs, cheese, lemon zest, and spices. Form the mixture into balls about the size of a walnut, brush them with olive oil, and arrange them on a parchment-lined baking sheet. 2. Bake the meatballs for 15–20 minutes at 350°F (180°C). 3. Cook the spaghetti in salted water until tender. Drain in a colander and let the water run off. 4. Peel and chop the garlic. Sauté it in the butter for 1 minute. 5. Add the spaghetti and meatballs to the garlic (I also throw in some arugula leaves), toss, and remove from the heat.
