Beef Meatballs in Sauce

- Cook the rice until half-done in 2.5 cups of water and let it cool. You can do this ahead—the rice keeps in the fridge for a good 3 days. 2. Peel the onion and garlic. Mince three-quarters of the onion as finely as you can, and mince the garlic the same way. 3. Mix the ground beef with the rice, add an egg, salt and pepper to taste, and the minced garlic and onion. Knead the mixture well until it's smooth (relatively speaking). 4. Grease a rimmed baking dish with vegetable oil. With wet hands, shape the meatballs and arrange them in a single layer. If you have extras, freeze them, save them for a second round, or just pan-fry them. 5. Peel the carrot. Dice the remaining onion. Grate the carrot on a medium grater. Stir 3 heaping tsp of flour into 1/2 cup of salted water. 6. Heat vegetable oil in a skillet and sauté the onion. Halfway through, add the carrot. Add the tomato paste and cook, stirring. Add 2–3 cups of water, the flour-water mixture, and salt and pepper to taste. Bring to a boil. Add the herbs (fresh or frozen), simmer briefly, and take off the heat. 7. Preheat the oven to 350°F (180°C). Pour the vegetable sauce over the meatballs and bake for half an hour. Enjoy!
