Smoked Pork Ears

One of the dishes is often smoked pork ears—a pretty cheap cut of meat that's usually easy to find at any market.

  • Put the cleaned pork ears (free of fat and bristles) in the bottom of a pot, cover with water, and set them to cook. When the water comes to a boil, add the soy sauce, the crushed unpeeled garlic, the star anise, bay leaf, a few black peppercorns, a few allspice berries, the dill with its seed heads, salt, and a peeled onion. Let it cook for another hour over low heat, checking that the broth is salty enough. After that hour, turn off the heat and let the ears cool in the broth for 1–1.5 hours. Now a little about the magic of smoking—you'll get more aroma if you use fruit-tree branches. Lay the ears carefully on an oiled grate, cover the smoker, and set it over the coals. Smoke for 30 minutes. Your pork ears are smoked—now cut them into thin strips and enjoy!
