Pearl Barley Christmas Kutia
A simple Christmas kutia made with pearl barley — with honey and poppy seeds! Many families make kutia during the Christmas season. Here's an easy version made in a thermos, for anyone short on time.
Cooking method

Step 1:
Rinse the pearl barley and put it in a thermos.

Step 2:
Pour boiling water over the barley, stopping 3–4 cm (about 1.5 inches) short of the neck.

Seal the thermos well and leave it for 4 hours.

Step 4:
Cover the poppy seeds and the raisins with boiling water (in separate bowls). Let them soak for 1 hour.

Step 5:
Chop the nuts (in a mortar, with a knife, or with a rolling pin).

Step 6:
Drain the poppy seeds and stir in the sugar.

Step 7:
Grind the poppy seeds in a mortar until a pale milky liquid appears.

Step 8:
Drain the raisins. Stir a little hot water into the honey.

Step 9:
Drain the barley and transfer the plumped grain to a roomy bowl. Add the honey, poppy seeds, raisins, and nuts.

Step 10:
Stir the kutia well and transfer it to a serving dish. If you like your kutia on the looser side, add more water to the honey.
