Bulgarian-Style Poached Eggs (Poshirani)

    1. Set a pot of water on to boil.
    1. Line a small bowl with foil or an oven bag.
    1. Brush the foil with oil.
    1. Dice your vegetables small and chop the herbs. Use whatever you like — bell pepper, tomato, carrot, peas, broccoli, green beans, corn, and so on; in winter, a bag of frozen mixed vegetables from the supermarket works great.
    1. Put some of the vegetables, herbs, spices, and salt in the bottom of the bowl.
    1. Carefully crack the egg on top, taking care not to break the yolk.
    1. Add the rest of the vegetables, herbs, spices, and salt.
    1. Gather the edges of the foil into a pouch and tie it shut with string.
    1. Lower the pouch into the boiling water for 5 minutes for a soft yolk or 10 minutes for a firm one.
    1. Lift the pouch out of the water and submerge it in cold water to cool for about 5-10 minutes.
    1. Carefully unwrap the foil and turn the poached egg out onto a plate or a slice of bread. Serve it with a sauce, a salad of cucumber, cabbage, or tomato, and a garnish of fresh herbs. Enjoy! You can also tuck pieces of cheese and sausage into the pouch along with the vegetables, herbs, and spices.
