Cooking method
Soak the beans for the filling for 6-8 hours and then cook until ready.
Mix the matzoni with egg and salt. Then add flour and active dry yeast. Knead a lush, elastic and soft dough. We give it to rise twice, i.e. when it rises, we crush it once, beat the dough on the table and let it rise again.
Knead the boiled beans with a pusher or pass through a meat grinder. Chop the onion and fry it in vegetable oil. Add fried onions, spices and salt to the bean mass. Mix it up. The filling is ready.
Divide the dough into 5-7 pieces, cover them from drying out. To form lobiani, we flatten a piece of dough and put a portion of the bean filling in the middle. Then we gather up the edges of the dough. With careful pressing movements, we flatten the dough with the filling into a thin cake. Fry lobiani on both sides with vegetable oil, in preheated frying pans. We lubricate the finished tortillas with butter and stack them on top of each other. Bon appetit!
