  • Soak the beans for the filling for 6-8 hours, then cook them until tender. Stir together the matsoni (a Georgian cultured-milk product, similar to thick yogurt or kefir), the egg, and some salt. Then add the flour and the instant dry yeast. Knead a fluffy, elastic, soft dough. Let it rise twice: once it has risen, punch it down, slap it against the counter a few times, and let it rise again. Mash the cooked beans with a potato masher or run them through a meat grinder. Chop the onion and sauté it in vegetable oil. Stir the sautéed onion, spices, and salt into the mashed beans. Mix well — the filling is ready. Divide the dough into 5-7 pieces and keep them covered so they don't dry out. To form each lobiani, flatten a piece of dough, place a portion of bean filling in the center, and gather the edges of the dough up over it. Using gentle pressing motions, flatten the filled dough into a thin round. Fry the lobiani on both sides in vegetable oil in preheated skillets. Brush the finished flatbreads with butter and stack them on top of one another. Enjoy!
