Nanking Cherry Jam
A wonderfully tasty jam — the perfect dessert with a pleasant little tang! Nanking cherry (also called "felt cherry") is one of the sweetest varieties, grown in Siberia. Jam made from it is always sweet, without the tartness we're so used to. Making jam from Nanking cherries isn't much different from making it with any other variety.

Step 1:
The ingredients for the jam.

Rinse the cherries thoroughly.

Pit the cherries.

Layer the prepared cherries in an enameled pot, alternating a layer of berries with a layer of sugar.

Wait until the cherries release their juice.

Step 6:
Bring the mixture to a boil over medium heat, stirring constantly. Once it boils, take the jam off the heat for half an hour.

Step 7:
Then bring it to a boil again, and let it rest for another half hour.

Step 8:
After the third boil, ladle the Nanking cherry jam into jars and seal the lids.

The finished jam comes out quite thick and works not only as a dessert but also as a sweet filling for buns or pies.
