- There are a few ways to put up quince with sugar for the winter, but my favorite is quince in sugar syrup, which I'll walk you through. Wash the ripe quince thoroughly, rubbing the fuzz off the skin with a sponge. Peel the quince and cut it into pieces of the size you want. Pour boiling water over the cut fruit. Make a sugar syrup from the sugar and water: dissolve the sugar in the water and bring it to a boil. After it boils for five minutes, add the citric acid and take the finished syrup off the heat. Pour the syrup over the quince pieces, stir well, and let cool. Bring the cooled quince back to a boil and cook over medium heat, stirring occasionally, for 10 minutes, then cool again. Repeat the cook-and-cool process two more times. Spoon the finished quince in syrup into clean, dry jars and seal the lids. Store this dessert in a cool place.
