  • Crack the egg into a bowl, add the salt, pepper, and baking soda, and mix well. Add the flour and knead a stiff dough. Dust a board with flour, divide the dough in two, set one half aside, and roll the other out thinly. Cut it into strips about 1 inch (3 cm) wide, dust them lightly with flour so the dough won't stick together when you slice it into noodles, then cut to whatever thickness you like—thin works great. Add the finished noodles to any broth with potatoes and you've got soup. Done!
