  • Making this compote follows good old traditions, so there's nothing complicated to wrestle with. Gather the base for the recipe—a generous batch of cleaned serviceberries picked from the bushes. Pack them into individual jars. The cooking itself starts with a sugar syrup: dissolve 300 g (about 1½ cups) of sugar in 1 liter (about 4 cups) of water, warming the pot on the stove. The compote doesn't call for a thick syrup, so that's nearly the whole job. Pour the sweet water over the berries in the jars, seal them, and process in a water bath for 5 minutes. Voilà—a sweet, refreshing drink! Just let it cool down.
