- First make the invert syrup using its own recipe. Dissolve the gelatin in half a cup of water and let it sit for half an hour. Pour the remaining water into a saucepan and add the salt, sugar, and invert syrup. Bring to a boil, stirring. Then reduce the heat to low and cook without stirring for another 8 minutes. Melt the bloomed gelatin in the microwave. Pour into a suitable bowl and start beating with a mixer at the lowest speed. Gradually add the hot syrup. Increase the mixer speed and beat for 8–13 minutes, until the mixture turns white and thick, like egg whites beaten to stiff peaks. At this stage you could use the marshmallow as fondant for a cake, but we'll keep going. Brush plastic wrap with vegetable oil and line a shallow dish with it. Transfer the mixture to the dish, smooth it out, cover the top with wrap, and put it in a cold place to set. Mix the powdered sugar with the starch. Cut the marshmallow into pieces and roll each in the dry mix. And that's it—your homemade marshmallows are ready to share with family and friends!
