  • Cover the chicken with water, bring to a boil, and drain that first broth. Then add about 3 liters of fresh water to the pot with the chicken. Add a whole washed onion (skin on) and a whole carrot — the onion skin and carrot give the broth a lovely amber color. Cook the broth. While it simmers, make the homemade noodles: combine 2 eggs with the water and add 1 cup of flour. Knead a stiff dough, then let the ball rest for half an hour. Knead it again, roll it out thinly, and cut into noodles. Spread the noodles on a baking sheet, put it in the oven at 50°C (120°F), and turn on the fan. Let them dry for about half an hour, stirring now and then so they dry evenly. About 20 minutes after the broth comes to a boil, remove the cooked onion and carrot and add the other two onions and the carrots, peeled and cut into thin strips ahead of time. Salt the broth. Peel the potatoes, cut them into small cubes, and add to the soup. When the potatoes are nearly done, add the homemade noodles and cook the soup until everything is tender. At the end, add the bay leaf, parsley, and the juice of one lemon. Season with salt and pepper to taste. Cover and take off the heat. Serve with a slice of lemon.
