  • In a suitable saucepan, warm the sour cream with a little vanilla, add the sugar, and bring to a boil, stirring. Turn the heat down to the lowest setting and cook, stirring constantly, for about an hour, until the whole mixture thickens and changes color. Then spread it onto parchment paper (a plastic mold works too) and let it cool. You don't have to refrigerate it — room temperature is fine. Give the candy about two hours to set firm. Then cut the set sheet into bars and dust the toffees with powdered sugar.
