Apple Jam with Cinnamon

Proof that apples can be not just tart but wonderfully sweet! The apples come out almost like candied fruit. Mom's recipe — jam made from Antonovka apples (a tart Russian variety).

    1. Peel the apples and core them. 2. Cut each apple into 8 pieces. 3. The night before, layer them with sugar and stir. 4. In the morning, cook over low heat so nothing scorches. Stir in the cinnamon near the end of cooking. To test for doneness, drop a bit onto a plate — a drop of finished jam shouldn't run. Seal the jars while still hot.
