  • This recipe most likely comes from Italian cooking. First, peel and core the apples, then grate them on the coarse side of a grater. Sprinkle the apples with lemon juice and sugar. Next, peel the red onion, put it in a saucepan, and cover it with sugar. Once the onion releases its juice, set the pan over low heat and bring to a boil. Then add the apples with their lemon juice. Stir, cover the pan, and cook over very low heat for about an hour (or an hour and a half). Check whether the jam is done and, if it is, ladle it into jars. This onion jam pairs beautifully with meat dishes and with a variety of cheeses.
