When I remember how much horseradish was growing on my street, next to the column, I also remember something else – how upset I was when I found out how much healthy food you can cook from it! After all, when I got tired of this lush vegetation covering the rest of the plants – radishes, etc., I just weeded it out! The stubborn horseradish got out the next time, and then again. And I fought and fought with him. Until I found out this recipe. Since then, harvesting horseradish for the winter has been a tradition for me, kind and pleasant. After all, my men just love horseradish.
So let's cook this miracle together! As usual, we prepare the ingredients for processing. We clean the horseradish. Then we will grind it in a meat grinder. Although someone rubs it on a grater and grinds it in a blender. Then we transfer the mass into jars and pour boiling water. While we were doing all these manipulations, the beetroot should be cooked. Then we will grate the boiled beets on a grater, preferably on a small one, and add it to the dish when both horseradish and beets cool down. Here we also add sugar with salt and vinegar. When everything is thoroughly mixed, close the jar tightly with a lid. And in winter, your family, who are just waiting for the moment when all this can already be consumed, will thank you!
