- My all-time favorite jam is pitted plum jam. I've loved it since I was a child and was always disappointed whenever we ran out of it at home. I'd eat it plain or in all sorts of ways. Now I'd like to share this recipe from my childhood with you. First, choose your plums. They should be a variety whose pits separate easily from the flesh. Once you've picked the right plums, wash and dry them well. Then remove the stems, cut the plums in half, and take out the pits. When all the plums are ready, pour hot sugar syrup over the halves. How do you make the syrup? Very simple! Combine the water and sugar in a saucepan, set it over medium heat, and warm it until all the sugar dissolves. Cook the plum jam in three or four rounds, alternating 10 minutes of cooking with 8-hour rests. After the final round, let the jam cool a little, then spoon it into sterilized jars and seal them.
