- Reading the recipes Koreans cook from, I can't shake the urge to travel there and taste how they make it. So today we're making a delicious Korean dish. It's built on noodles (called sari in Korea) and a broth that should be sharp and tangy. To make the Pyongyang noodles (Pyongyang naengmyeon), knead a dough from the buckwheat flour and potato starch — but use hot water. While the dough is still warm, work in the baking soda. As soon as it's thoroughly mixed, start making your noodles right away. Before all that, get the meat going: rinse the beef, pork, and chicken well in cold water and set them to simmer. Once cooked, neatly slice the pork and beef, and carefully tear the chicken into small pieces. You're left with a gorgeous broth — season it with a little oil, plus soy sauce, salt, and the various seasonings you prepared ahead of time. Next come the pears: peel them and cut them into diagonal strips about 2 inches (5 cm) long. Finely chop the boiled egg. Mound the noodles in a bowl. First add the egg and kimchi, then the meat, followed by the sauce and pears, plus the chopped green onion with red pepper. Fill the bowl to the top with broth, and serve the vinegar and mustard on the side.
