How to prepare apricot compote with citric acid for the winter?
Prepare the apricots first. To do this, thoroughly wash the fruit under hot water, and then lower it into boiling water for 3 minutes, no more. Then peel the fruit from the skin and remove the bones from them, cutting into two halves. You can not peel apricots from the skin (then you can just pour boiling water over them), but the stone must be removed. Next, take two- or three-liter cans, wash them well, put apricots in jars. Prepare the syrup for the compote separately. To do this, pour sugar with water and add citric acid, put on a slow fire. Stir constantly so that the sugar does not burn, bring to a boil and boil for about 5 minutes. Pour hot syrup over the apricots in jars and put them to sterilize. Then roll up the jars, turn them over and leave to cool, covering with a blanket. After a while, put it in the cellar.
