Kapustnyak (Sauerkraut Soup) with Pork
A tasty, fragrant soup with pork and sauerkraut. This dish, charmingly named "kapustnyak," reminded me of a French soup I love — which is exactly why I decided to make it one day. I'm sure the tangy flavor of this soup (or shchi, really) will win a lot of people over. And it comes together quickly, with no fuss.

The whole process starts by boiling a single piece of pork, then cutting it into serving portions. Strain the resulting meat broth.

Squeeze the excess juice from the sauerkraut, put it in a saucepan with oil, and start simmering it over low heat, gradually pouring in the broth.

Separately, fry the chopped carrot and onion in butter,
