Wonderful summer Cold beetroot borscht, which children enjoy eating. Ideal for those who are used to watching their figure. This food does not contain meat, and therefore it is also suitable for vegetarians (if they have nothing against eggs and sour cream).
And here is the recipe itself: we divide the beetroot into two parts. The first one is baked in the peel, the second one is cleaned and cooked without the peel. The water should be pre-salted and diluted with a little vinegar so that the beetroot does not lose color. When our beets arrive in time, we cut both of them into strips. Potatoes are boiled, as for any soup – peeled, eggs are also cooked. We combine beets with diced potatoes and pour everything with beetroot and potato broth. After we put it in the refrigerator. When the half-cooked borscht has completely cooled down, we crumble boiled eggs, cucumbers, green onions into it. To your taste, add sugar and salt, mix well. Borscht is served with chopped dill and sour cream.
