Clear Pork Broth

Put the bone-in pork in a pot and cover with water. Add salt, the bay leaf, peppercorns, the onion (skin on), and the peeled carrot. Bring to a boil and skim off the foam — for a clear broth, be sure to remove all of it. Lower the heat so the broth barely simmers and cook for 3 to 4 hours, until the meat is falling off the bone.

Step 3:
The broth is ready. Set the meat aside, discard the bay leaf, peppercorns, carrot, and onion, and carefully pour the broth into a bowl. Use it to make soups or to enrich other dishes. You can also pour the cooled broth into containers or bags and freeze it for later. And it's wonderful sipped hot with a slice of bread — so good!
