Georgian-Style Cucumber and Tomato Salad for Winter
A fast, inexpensive, and out-of-the-ordinary canned salad! This very simple recipe makes a Georgian-style cucumber-and-tomato salad to put up for winter, no canning bath required — sure to please and to surprise you with its wonderful flavor!

Step 1:
Want an easy, quick Georgian-style cucumber-and-tomato salad (no canning bath) that everyone will love? Start by gathering all your ingredients and spices for this Georgian vegetable salad to put up for winter.

Step 2:
Fit a meat grinder with the coarse plate and grind 1 kg of tomatoes into a large enamel basin. Add 2 tablespoons of coarse (pickling) salt and 125 g of sugar.

Pour 125 ml of vegetable oil into the basin, set it on the stove over high heat, and stir everything together as you bring the tomatoes to a boil.

Reduce the heat to medium and continue cooking for 10 to 15 minutes.

Press 150 g of garlic into a small bowl, then add it to the basin of tomatoes.

Add 10 g of khmeli-suneli, 1 teaspoon of ground red pepper, 3 to 4 bay leaves, 10 black peppercorns, and 1 teaspoon of coriander to the basin, and stir.

Pour in 125 ml of distilled white vinegar (9%) and stir everything together well. Cover the basin and bring the tomato mixture to a boil over high heat.

Add 2.5 kg of well-rinsed cucumbers, cut into small half-moons, to the boiling tomato mixture.

Stir everything in the basin together and cover it.

Once it boils, continue cooking the salad for another 10 to 15 minutes, until done.

Pack the hot salad into clean, sterilized jars, filling them right to the top.

Seal the filled jars tightly with sterilized lids.

Turn the sealed jars upside down to check the seal, then cover them with a warm blanket until completely cool.

Store the jars of Georgian-style cucumber-and-tomato salad in a dark, cool place away from heat sources.
