Georgian-Style Cucumber and Tomato Salad for Winter

    Fit a meat grinder with the coarse plate and grind 1 kg of tomatoes into a large enamel basin. Add 2 tablespoons of coarse (pickling) salt and 125 g of sugar.

    Pour 125 ml of vegetable oil into the basin, set it on the stove over high heat, and stir everything together as you bring the tomatoes to a boil.

    Reduce the heat to medium and continue cooking for 10 to 15 minutes.

    Press 150 g of garlic into a small bowl, then add it to the basin of tomatoes.

    Add 10 g of khmeli-suneli, 1 teaspoon of ground red pepper, 3 to 4 bay leaves, 10 black peppercorns, and 1 teaspoon of coriander to the basin, and stir.

    Pour in 125 ml of distilled white vinegar (9%) and stir everything together well. Cover the basin and bring the tomato mixture to a boil over high heat.

    Add 2.5 kg of well-rinsed cucumbers, cut into small half-moons, to the boiling tomato mixture.
