  • Peel and seed the pumpkin and grate it on the fine side of a grater. The recipe gives the net weight of the pumpkin once it's already grated. Squeeze all the juice out of the grated pumpkin using a piece of damp cheesecloth. Mix the juice with the water called for in the recipe, but set aside 2 tablespoons of that water to dissolve the starch. Always go for corn starch — it's the better choice, especially for kids. Put the pumpkin juice and water in a pot and bring it to a boil. Right away, stir in the dissolved starch and cook, stirring constantly so no lumps form. Add the sugar. As soon as the kissel comes to a boil, take it off the heat and let it cool. Serve it to your little one to enjoy. By the way, pumpkin kissel is good for grown-ups too — and its cheerful orange color can brighten even the grayest, rainiest day.
