Cracked Buckwheat Porridge in a Multicooker
Make wholesome breakfasts with your multicooker! Cracked buckwheat porridge turns out especially good cooked in a multicooker. Honestly, every porridge comes out of a multicooker like it's from a wood-fired oven — rich in a way that's hard to put into words. And that's just one of the perks: once the ingredients are in, you're free to get on with other useful things while you wait for the beep that says "breakfast is served." That's a real lifesaver in the morning, when every minute counts. Cooking with a multicooker is a pure pleasure!

- Porridge made from cracked buckwheat comes out much more tender than one made from whole buckwheat groats, which makes this version a better fit for young children. You can add raisins for extra flavor — rinse them and add them to the multicooker bowl along with the grain. But if you're using a delayed-start timer, add the raisins to the finished porridge instead, so the milk doesn't sour (steam them first). You can also top the dish with fresh berries or fruit. For a creamier porridge, add a little more milk; the same goes for the sugar — adjust it to taste. That said, everyone knows extra sugar isn't doing you any favors, so you could swap it for a healthier sweetener like honey. 1. Like any grain, cracked buckwheat should be picked over and rinsed before cooking. So let's start there: sort through the buckwheat, put it in a bowl, cover it with cold water, swish it around, and drain. Rinse it this way a few times until the water runs clear. 2. Put the prepared grain into the multicooker bowl and pour in the milk. If you're watching your diet, you can use water or store-bought skim milk instead; if children will be eating it, whole milk is best. 3. Add the sugar and a pinch of salt. Select the "Milk Porridge" program and set the cooking time to 40 minutes. When it beeps, the porridge is ready. If you have time, you can let it sit a while longer on "Keep Warm." Ladle the porridge into bowls and serve. If you like, add a pat of butter and some fresh berries. Enjoy!
